Campfire Cooking

I've been thinking a lot lately about how to cook over a campfire. I ordered a small grill from Lawson Equipment, and plan to take a several day canoe trip this summer and take very little prepared food on the way.

Anyone have experience cooking on a campfire? Recipes? Methods? Grilling I can do, but if you bake in aluminum foil or something how do you tell if it's done?

I've contemplated getting a Banks Fry Bake, which is like a lightweight dutch oven, but on this trip I'd kind of like to rough it. I've always had it in the back of my mind that it would be cool to do a trip where you don't take food and just eat what you catch. Basically take a Mora, a fire kit, a small grill, some aluminum foil, and several fishing rigs. I am sort of drawn to the inherent risk of going hungry if the fish don't bite....I don't know why.

I do a lot of float trips in the summer and often cook right in the coals or on the grill. One of my favorite meals is to take a whole chicken, cut it in half, spice it up leaving the skin on and wrap it in tinfoil. I'll also take little red potatoes cut in half with a couple dollops of butter and wrap them in tinfoil. Once the fire burns down and I have a good bed of coals, I'll throw that all in there, cover with hot coals, and let it cook for an hour our so, usually a little longer though just to make sure everything is thoroughly cooked. Turns out perfect every time, with the meat falling off the bone.

Taking along a little $5.00 free standing grill can come in pretty handy also. Hard to beat a porterhouse steak, baked potato, and a couple cold Fosters oil cans on a float hunt.

I rarely if ever cook over an open flame, but instead make a pile of hot coals to cook over. For myself I prefer cast iron gear. Also, while I rarely cook fish (not much of a fisherman) I have found that pineapple grills well with most any wild meat.

Grilled pineapple is wonderful but I'm not carrying a pineapple in :). A boat it would be great
